Job # 76489 - Sodexo is seeking an Executive Chef (II) for a 400 Resident Senior Living Continuing Care Retirement Communities in the Chicago, Illinois area.

 

In this role, you manage food production for resident dining, retail venues, and catered events with the focus on resident involvement and well-being. Responsibilities; supervision and training of 40 employees, menu development, inventory management and on-line purchasing, food & labor costs controls, food quality and standards, food & kitchen safety and sanitation monitors for regulatory compliance, employee and resident satisfaction.  Your skills to support the primary focus of driving food quality and culinary innovation in all aspects of production to enhance and energize Healthy Living for our Residents is mission critical in this Faith-Based community.

 

Your Skills Checklist for this opportunity;

Culinary Degree / Trade School Certificate and Servsafe Certificate

Senior / Fine dining experience in Restaurants / Country Clubs / Hotels

Inventory management & on-line ordering

Financial skills for 3 million in volume

HR skills to train & develop culinary food production teams

Computer skills; food & labor management systems

Working knowledge of HACCP monitors for Regulatory Compliance

Menu Planning for resident dining, food retail and catering

Experience with quality standards for food production & catering

Dynamic leadership skills for outcomes that exceed client and resident expectations

 

Schedule; 9am-7pm with rotating weekends / holidays

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
